Old Fashion Apple Crisp

OLD FASHION APPLE CRISP
Crumb Topping from Tastefully Vegan
Apple Filling from The Guilt-Free Gourmet


Topping:


1 cup Quick oats

4 Tbsp brown sugar or Sucanat

½ cup whole Wheat Pastry Flour

3 Tbsp Oil

½ cup walnuts, chopped

1 Tbsp Water

¼ cup Old-fashion oats

1 tsp vanilla extract

¼ cup shredded coconut (optional)

¼ tsp salt

¼ - ½ tsp cinnamon, ground


Combine all dry ingredients except brown sugar in a mixing bowl.
Mix brown sugar with oil, water and vanilla.
Combine the liquid and the dry ingredients and stir until mixture is crumbly. Set aside.


Filling:


Place in large pan:
1 -12 oz can, 100% apple juice concentrate
2 Tbsp lemon juice
½ tsp coriander, ¼ tsp cardamom powder or substitute coriander & cardamom with 1 tsp Cinnamon

Add to above:

¼ cup Cornstarch: mixed with ¼ cup cold water

Cook until thickened, then add and mix well:
8 cups Sliced, cored apples (Golden Delicious are best)
½ cup Raisins (optional)


Cook for 5 to 10 minutes, stirring constantly. (May omit this step and add 10 minutes to baking time)
Prepare 9” x 13 “ baking dish with cooking spray.
Pour apples into the dish and spread out evenly.
Cover apple filling with the topping
Bake at 350 degrees, 25 to 30 minutes until topping is golden brown.
Serve with favorite non-dairy whipped cream or vanilla ice cream.
Variation: Substitute half the apples with pears for a great new taste.
